Zucchini Bread

3 eggs
1 cup oil
2 cups sugar
1 teaspoon vanilla
3 cups flour
1 1/2 teaspoons cinnamon
1/4 teaspoon baking powder
1 teaspoon salt
3/4 teaspoon nutmeg
2 cups zucchini, shredded unpeeled
1 cup crushed pineapple, drained
1 cup chopped nuts
Beat together eggs, oil, sugar, and vanilla until thick.
Sift together flour, cinnamon, baking powder, salt, and nutmeg.
Add to sugar mixture.
Add zucchini, pineapple, and nuts.
Mix well.
Pour into 9" x 5" loaf pans (2 or 3).
Bake 1 hour at 350°.
