Date Pinwheel Cookies

1 cup white sugar
1 cup brown sugar
1 cup shortening
3 eggs, beaten
4 cups sifted flour
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon vanilla
Cream sugars and shortening.
Add beaten eggs.
Sift dry ingredients, and add to sugar mixture with vanilla.
Roll dough until 1/2" thick.
Spread with Date Filling.
Roll up jelly roll fashion.
Let stand over night in refrigerator.
Slice and bake in moderate oven 375° for 12 - 15 minutes.

Date Filling

1 pound dates
1/2 cup water
1/2 cup sugar
Combine dates and water, and cook together until thick.
Set aside to cool before using.
