Fresh Peach Cobbler

6 cups sliced peaches (3 1/2 pounds or 9 peaches)
1 1/2 cups sugar
4 tablespoons tapioca
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups water
2 tablespoons lemon juice
3 tablespoons butter
Heat ingredients in 9" x 13" pan in oven while mixing topping.

Topping

2 cups sifted flour
4 tablespoons sugar
1/2 cup shortening
1 egg, slightly beaten
4 teaspoons baking powder
1 teaspoon salt
2/3 cup milk
Sift together flour, baking powder, sugar and salt.
Cut in shortening till it looks like corn meal.
Mix milk and beaten egg together and add to dry ingredients, stirring with a fork until mixed.
Drop by tablespoons onto hot peaches.
Bake 35 minutes at 400°.
