Ken's Favorite Chocolate Cake
2 1/4 cups sifted cake flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup butter or margarine
2 1/4 cups brown sugar, packed
3 eggs
1 1/2 teaspoons vanilla
3 1-ounce squares unsweetened chocolate, melted, cooled
1 cup dairy sour cream
1 cup boiling water
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup butter or margarine
2 1/4 cups brown sugar, packed

1 1/2 teaspoons vanilla
3 1-ounce squares unsweetened chocolate, melted, cooled
1 cup dairy sour cream
1 cup boiling water
Sift together flour, soda and salt; set aside.
Cream together butter and brown sugar in mixing bowl until light and fluffy, using electric mixer at medium speed.
Add eggs, one at a time, beating well after each addition.
Beat in vanilla and chocolate.
Add dry ingredients with sour cream to creamed mixture, beating well after each addition.
Stir in boiling water (batter is very thin).
Pour batter into greased and floured 13" x 9" pan or two 9" round pans.
Bake in 350° oven 35 minutes or until cake tests done.
Cool in pan on rack for 20 minutes.
Frost with Butter Cream Frosting.

1 16-ounce package of powdered sugar
1/2 cup butter or margarine
1 teaspoon vanilla
2 - 3 tablespoons hot water
1/2 cup butter or margarine
1 teaspoon vanilla
2 - 3 tablespoons hot water
Sift powdered sugar into mixing bowl.
Add soft butter or margarine and hot water.
Beat until smooth.
Add soft butter or margarine and hot water.
Beat until smooth.
