New York Style Cheesecake
Crust
1/4 cup butter, melted
1 1/4 cups vanilla wafer crumbs (35)

Filling
4 8-ounce packages cream cheese
2 teaspoons vanilla
1/4 cup cornstarch
1/4 teaspoon salt
1 1/4 cups sugar
4 eggs
1 cup heavy or whipping cream

Brush bottom and sides of 9" springform pan with 1 tablespoon melted butter.
Stir crumbs and butter together, press evenly.
Beat cream cheese till smooth, add vanilla, then cornstarch and salt.
Add sugar, beat on low.
Add eggs just until combined.
Stir in cream, pour batter into pan.
Bake 1 1/4 - 1 1/2 hours in a 350° oven till set.
Turn off oven, open door, leave in oven 15 minutes or longer.
Then cover and refrigerate.
