Sesame Chicken

6 large chicken breasts, split, skinned and boned
2 eggs, slightly beaten
1 tablespoon water
1 tablespoon soy sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup flour
1/2 cup sesame seeds
1/2 cup butter or margarine
1 recipe Mushroom Sauce (below)
Remove skin from chicken breasts.
Blend together eggs, water, soy sauce, salt, and pepper in a shallow dish.
Dip chicken into flour, then into egg mixture, and next into sesame seeds.
Melt butter in 13" x 9" x 2" pan.
Add chicken and turn to coat with butter.
Bake at 400° for 40 minutes, until golden brown and tender.
Serve with Mushroom Sauce and mashed potatoes!

Makes 6 servings.

Mushroom Sauce

1/2 pound fresh mushrooms (or one 4-ounce can)
1/4 cup butter
1/4 cup flour
1 13-ounce can chicken broth
1/2 cup light cream
2 tablespoons chopped parsley
1/8 teaspoon pepper
Saute mushrooms in butter until golden.
Cover and simmer 5 minutes.
Blend in flour.
Slowly add chicken broth, stirring until smooth.
Stir in cream and parsley.
Season with pepper.
Heat just until mixture simmers.
