Combine desired amount in bowl.

Add just enough dressing mixture, when ready to serve, to coat spinach.

1/3 cup sugar
1/3 cup tarragon vinegar
1 cup oil
3 teaspoons dry mustard
1 small onion, diced
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon celery seed

Combine ingredients in blender and refrigerate until serving time.
Then drizzle over spinach, mushrooms and bacon bits.
Toss gently to coat all leaves.
