Taffy Apple Salad
4 cups red delicious apples, chopped, skin on (2 large)
1/2 cup pineapple juice
1/2 cup sugar
1 tablespoon flour
2 tablespoon white vinegar
1 egg, well beaten
8 ounces Cool Whip
1 cup peanuts, dry roasted unsalted, chopped

Combine flour, sugar, juice, vinegar, and egg in saucepan.
Heat on medium high flame till thick.
Simmer for 5 minutes till like pudding consistency.
Cool well.
Fold Cool Whip, apples, and 1/2 cup nuts in pudding mixture.
Place in serving bowl and top with remaining nuts.
Chill 3 - 4 hours.
