Soup From Menton
2 cups minced onions
2 large cloves garlic, mashed
3 tablespoons olive oil
6 cups chicken stock
1 can (32 ounces) plum tomatoes, well drained, chopped
2 cups potatoes, pared and chopped
2 cups green beans, ends trimmed, cut into 1-inch pieces
2 small zucchini, chopped
1 cup cauliflower flowerets
4 ounces thin spaghetti, broken into 1-inch pieces
2 - 3 tablespoons basil paste (combination of pureed fresh basil leaves and olive oil)
1 tablespoon tomato paste
salt and freshly ground pepper
grated Parmesan cheese

Sauté onions and garlic in oil in Dutch oven partially covered over medium heat until soft, about 5 minutes.
Add chicken stock and tomatoes; heat to boiling.
Stir in potatoes and green beans; reduce heat to low; simmer uncovered for 10 minutes.
Add zucchini and cauliflower; simmer uncovered until tender, about 15 minutes.
Stir in spaghetti; simmer uncovered until spaghetti is tender, about 15 minutes. (At this point the soup can be frozen for up to 4 months.)
Mix basil paste and tomato paste in small bowl; whisk into soup.
Season with salt; sprinkle with pepper and Parmesan cheese.
